• I’m making turkey stock in the oven as I write this. I used to boil chrcnek/tuikey carcasses to death on the stove for a few hours.I never knew about the oven technique. I’m excited to taste how it turns out. It seems it would make for a richer stock, right?BTW, I just returned from France a week ago and had foie gras for the first time in Paris. I thought it was pretty tasty.
